We press this grape immediately after harvest to retain as much of the natural spice flavors and aromas as we can for our Gewürztraminer. We do not use any oak in the creation of this wine, in order to promote the apricot and subtle flowers that can be found in the juice. Harvesting in the mid-afternoon helps to build "heat" in the grape, capturing the subtle cinnamon texture. This wine is full of ripe apricot and subtle hints of sweet spices such as nutmeg, cinnamon, and ginger, which all blend together in a rich tapestry of flavors and aromas.
